2 cups dry macaroni (a little more if using rotini)
1 tbsp oil or butter
1 large raw chicken breast, cubed (or 1.5 cups cooked chicken, chopped)
1½ cups broccoli, cooked and chopped
1 cup mushrooms, chopped
½ medium pepper, chopped
1 tsp (or 1 medium clove) chopped/minced garlic
1/4 cup butter
1/4 cup flour
2 cups milk (approx.- add more if sauce is too thick)
2 cups grated sharp (old) cheddar
½ cup grated/powdered parmesan

Measure out ingredients and chop as required. Bring 6 cups water to a boil in a medium pot. Cook the pasta to desired tenderness. Drain.

While pasta is boiling, melt 1 tbsp oil or butter in a larger pot and sauté raw chicken pieces for 2 minutes or until no longer pink. Set cooked chicken aside and return the empty pot to the burner.

Melt 1/4 cup butter on medium-high. If using, add chopped mushrooms, garlic and peppers. Sauté for 2-3 minutes. Stir in flour, which will immediately combine with butter into a roux.

Whisk in milk. Stir slowly and continuously until it comes to a boil and then turn heat down. Simmer on low for 5 minutes.

The sauce will now be cooked and quite thick. Stir in grated cheddar and parmesan to melt and blend. Stir in drained pasta, cooked chicken and cooked broccoli. Turn off heat, cover and let sit for 10 minutes. Ready!
