4 large boneless chicken breasts
Salt and black pepper to season
2 tbsp olive or vegetable oil
2 tbsp butter
2-3 green onions, chopped
Juice of ½ lemon or lime
2 tsp Dijon mustard
¼ cup chicken broth

Directions:
Directions:
One at a time, pound chicken breasts flat inside a large Ziploc bag or between sheets of plastic wrap. Sprinkle with salt and pepper to season.

Heat 1 tbsp each of oil and butter in a large skillet. Cook chicken over med-high heat for 4 minutes on each side. Do not overcook, or chicken will be dry. Transfer to a warm serving platter.

Add green onion, mustard, lime juice and chicken broth to drippings in skillet. Whisk in remaining butter and oil. Pour sauce over chick and serve. Good served with steamed broccoli and noodles with alfredo or cheddar cheese sauce.
