2 cups macaroni (or 1.5” round fistful of spaghetti) uncooked
1 lb ground beef or veggie meat crumble
2 tbsp butter
½ - 1 cup each chopped celery, mushrooms, onions and/or peppers
1 can 16oz thick & rich tomato sauce
Pinch sugar
½ tbsp dry oregano
1 tsp dry chilies
¼ cup grated parmesan, romano or asiago cheese
Few fresh basil leaves, chopped

Directions:

In a medium-large pot, brown the ground beef, if using. Drain and set aside. In the same pot, melt butter. Add in whatever aromatic vegetables you are using and sauté until tender. Any of them will work and in any combination, or none if you prefer.

Then add back the ground beef (if using) and the whole can of tomato sauce. Add a pinch of sugar. This cuts any acidic taste from the tomatoes. Add oregano. Add dry chilies for a little heat if you like it spicy. Simmer the sauce over med-low for about 15 minutes and remove from heat. If using veggie beef crumble, stir it in at this point. It doesn’t need to cook and it will warm up in hot sauce. Let sit for 5 or so minutes to warm through.

Serve over cooked pasta. Top with grated parmesan cheese and chopped basil leaves to taste.

Spaghetti is a snap, and it doesn’t matter at all what kind of pasta you use. The sauce will serve 3-4 people, so measure out your pasta accordingly.
