1 lb ground beef or veggie burger
9 uncooked lasagne noodles
1-2 lb mozzarella cheese, shredded
1 cup ricotta
1/2 cup parmesan cheese
1 egg
1 can (540 mL) tomato sauce, plus extra sautéed chopped onions, peppers, mushrooms or tomato, as desired
Spices dried oregano and chilies, as desired

Separate about ½ cup of tomato sauce into a small bowl or cup and set aside. If using ground beef, brown it in a medium pot. Drain. Mix cooked ground beef (or veggie beef) with remaining tomato sauce and set aside. Add any spices desired.

Meanwhile, fill a large pot with about 6L water and bring to a boil. Cook lasagna noodles about 5-7 minutes or until tender. Drain and cool. In a bowl, beat egg and mix in parmesan, cottage/ricotta cheese, and about 1/3 of the shredded mozzarella. Once all of the above are done, set oven to 350 °F.

In a 9 x 13” glass or ceramic dish, spread the ½ cup tomato sauce that was set aside earlier into the bottom of the dish in a thin layer. Place 3 cooked lasagna noodles side by side in a layer over top of the sauce. Next, spread half the meat mixture over the noodles. Ensure to spread fairly evenly and reach all the corners and sides.

Add a second layer of lasagna noodles. Then spread the entire egg and cheese mixture on top, once again evenly and to the edges. Place the third layer of lasagna noodles. On top of that, spread the remaining meat mixture to the edges. Now, take all of the remaining mozzarella cheese and sprinkle overtop of the meat mixture. The mozza cheese layer should be fairly thick, and for the most part, cover the layer below. Bake in 350 °F oven for about 45 min. Let cool for 10 min before serving.
