4 cups water
2 cups dried pinto beans (1lb)
1 medium onion, chopped
1/4 cup vegetable oil
1 tsp salt
1 tsp cumin
2 cloves garlic, crushed
1 slice of bacon cut up

Directions:
Directions:
1. Mix water, beans, and onion in dutch oven. Cover and heat to boiling. Boil 2 minutes, remove from heat and let sit for 1 hour.
2. Add just enough water to cover beans. Stir in remaining ingredients. Heat to boiling, reduce heat to low. Cover and simmer about 2 hours, stirring occasionally and adding water if necessary, until beans are tender; drain. Beans can be covered and refrigerated up to 10 days.
