4 eggs, separated
2 cans condensed milk
¾ c. lemon juice
1 tsp. grated lemon rind

Crust:
1 box vanilla wafers, crushed
4 Tbsp. butter, melted

Topping:
1 pint whipping cream, whipped
1 tsp. vanilla

Directions:
Directions:
Make crust first so it can be cooling. Cook 3 to 5 minutes at 350º and cool.

Beat egg yolks and milk; add lemon juice and lemon rind. Pour into cooled pie crust. Partially whip the cream. Add sugar and vanilla to partially whipped cream and finish whipping. Spread over pie filling, sealing edges.

This pie is iconic in Jacksonville. The original Sadler's Restaurant served this. I can remember walking with friends to Sadler's after a Friday night football game (when I was in junior and high school) to eat Lemon Icebox Pie. The Sadler's grandson still serves this pie at his restaurant, Sadler's Kitchen, here in Jacksonville.
