1¼ c. sugar
¼ c. cornstarch
1¼ c. water
2 egg yolks, beaten
2 Tbsp. butter
1 Tbsp. grated lemon rind
3 Tbsp. lemon juice

Meringue:
2 egg whites
¼ tsp. cream of tartar
¼ c. sugar

Directions:
Directions:
Mix sugar and cornstarch in saucepan. Gradually stir in water. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Put egg yolks in a small bowl. Slowly stir half of the hot mixture into egg yolks. Then, blend into hot mixture in saucepan. Boil 1 minute longer, stirring constantly. Remove from heat. Continue stirring. Stir in remaining ingredients. Pour into baked pie shell. Cover with meringue. Bake in 400º oven for 8-10 minutes.

For Meringue:
Beat egg whites with cream of tartar until frothy. Gradually beat in sugar a tablespoon at a time. Continue beating until stiff and glossy. Put on pie. Bake as directed above.

This was a recipe that I got when I was in Home Economics in Jacksonville High School. We made the pie in class for a grade. I made one for Dad at home, and it quickly became his favorite pie! Sometimes, I added a little more lemon juice, because Dad liked it tart.
