2 tbsp pine nuts or other unsalted nuts (optional)
200g pasta
2 tbsp oil
½ a bunch of salad onions (or ½ a large onion or 1 shallot), white and green parts separated, finely chopped
50g smoked bacon (or pancetta or ham) roughly chopped
2 eggs
60g parmesan, finely grated
handful of parsley
chilli oil to serve (optional)

1. Toast nuts in frying pan (medium heat) until golden (2-3 mins). Put on board and cool, roughly chop. Boil pan of salted water and cook for 1 min less than the packet instructions.
2. Heat half of the oil, add onion whites, cook 3-5 mins (until softened), tip onto a plate. Add bacon to the pan, turn up heat and cook until crispy, then take off the heat.
3. In a large bowl, beat eggs and ¾ of the cheese, add black pepper. Transfer cooked pasta to frying pan with bacon. Add the softened onions, most of the salad onion greens, parsley, egg mixture and remaining oil. Add a little pasta cooking water, toss everything together. Serve with remaining cheese, salad onion greens and nuts.
