4 c. flour
2 c. oats
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1½ c. butter, softened
2 c. brown sugar
1 c. sugar
1 egg
1 tsp. vanilla
1 can (16 oz.) pumpkin
1 c. nuts
Assorted icings and candy

Directions:
Directions:
Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter; add sugars. Add egg and vanilla; mix well. Alternate dry ingredients and pumpkin. Stir in nuts. Drop ¼ cup dough onto greased cookie sheet. Spread into pumpkin shape. Add more dough for stem. Bake in 350º oven for 20 - 25 minutes.

When cooled, decorate cookies with icing and candies to make Jack-o-lantern faces.

We usually serve these cookies every Halloween at our Halloween party. Jennifer likes to bake them in a circle (instead of pumpkin shape) and ice with a cream cheese icing. Delicious either way!

If you like raisins, you can add them in place of the nuts.
