3/4 C Land of Lakes butter, softened
3/4 C powdered sugar
1 egg
1 tsp vanilla
1 1/2 C flour
1/4 tsp salt
1/2 C finely chopped pistachios or cashews*

Directions:
Directions:
Cream butter and powdered sugar until well mixed. Add egg, and beat well. Reduce speed to low, add flour and salt. Beat until well mixed. Form into a ball and wrap in Saran wrap and refrigerated at least 1 hour.

Place nuts in small bowl. Shape dough into 1 inch balls. Roll each in nuts. Place 1 1/2 inches apart onto cookie sheet. Flatten each cookie with bottom of glass and sprinkle with sanding sugar.

Preheat oven to 350 degrees. Bake for 7-8 minutes or until edges are lightly browned. Transfer to wire rack. Cool completely.

*Nuts can be added to the dough and then form into balls. Can also form into logs and then slice into 1/4 inch slices and bake. This is my preference.
