Pecan Fingers or Sand Dabs Recipe

Ingredients: 2 C sifted cake flour 2 T powdered sugar pinch of salt 1 tsp vanilla 3/4 C butter 2 T ice water 1 C finely chopped pecans

Directions:Using a food processor or pastry blender, place flour, salt and powdered sugar in bowl blend for 15- 30 seconds. Cut butter into 1/2 inch pieces and add to flour mixture just until blended. Add cold water, vanilla and pecans. Mixture will be crumbly, but it can be molded. Don’t over mix. (Continue on next page)
Using a small cookie scoop and roll into 1 inch balls or 2 inch fingers. Place on ungreased baking sheet that has been lined with parchment paper.
Bake at 375 degrees for 20-25 minutes. Watch carefully, they will just brown around the edges when done. Remove from oven and roll in powdered sugar at once and then roll again. Cool on cookie racks before storing. |

Notes: Along with Peanut Butter Buckeyes, these are my least favorite cookie to make, but unfortunately, it is one of the cookies my family wants the most at Christmas time besides the Ginger cookies. It must be the twice rolling in powdered sugar and it doesn’t make very many, so you have to make lots of batches! They come out better in single batches. This is not a sweet cookie but like shortbread. Also some would just get bigger and bigger because i got tired of rolling!.
