Directions:
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
Sift dry ingredients. Cream butter and sugars until light and fluffy. Beat in egg, almond and vanilla until blended. Stir in flour mixture and blend well. Add coconut and blend well. Drop by teaspoonfuls onto pan. They spread so leave at least 2-3 inches between cookies.

Bake for 9-12 minutes. Allow to cool on baking sheet for 3-4 minutes.

NOTES:
- Reduce coconut by 1 cup if adding nuts and chocolate.
-Toast coconut and macadamia nuts for added flavor.
-*A white chocolate bar is good to use. Just chop up like you would nuts. Aldi's has the best chocolate ("Choceur" white chocolate) It is the best!

Personal Notes:
These cookies are delicious if you like coconut and Macadamia nuts. This was my favorite cookie when I would go to the mall and I would head straight for Mrs Fields’s cookie counter.
