1 cup oats
1 cup oat milk
1 1/4 cup flour (1 cup of freshly milled soft white plus 1/4 c all purpose)
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup melted coconut oil
3/4 cup brown sugar
2 eggs
1 tsp vanilla
12 oz of halved blackberries or blueberries

Directions:
Directions:
Preheat oven to 350º.

Separately, combine oats and oat milk in a small bowl and allow to soak while assembling the rest of the ingredients.

In a bowl, combine the flour, baking powder, baking soda, and salt.

In a large bowl, combine the brown sugar, eggs, and vanilla. Beat with electric mixer.
Add oil and combine well.
Add flour mixture.
Add oat mixture.

Fold in berries.

Bake 20 minutes.
