1 pound dried black-eyed peas
½ pound smoked hog jowl
1 large onion, chopped
Red pepper to taste
Dash of mace
3 cloves garlic
1 teaspoon sugar
Salt to taste

Directions:
Directions:
Wash peas and cover with water; soak overnight. Cook jowl in water until tender. Add peas, onion, red pepper, sugar, mace and garlic. Cook slowly about 2 hours. Season peas with salt.
