6oz. Rigatoni
1 medium Zucchini, sliced lengthwise , cut into ¼ moons
1 Garlic Clove, minced
9oz. Italian Pork Sausage
1 T. Tomato Paste
4 T. Cream Cheese
1 T. Chicken Stock Concentrate
1 tsp. Red Chili Flakes
6 T. Parmesan Cheese

Cook the pasta in boiling water for 9-11 minutes. Reserve 1 cup of the pasta water, then drain and set aside.
While the pasta cooks, heat a drizzle of oil in a large skillet, over medium-high heat. Add the zucchini, season with salt and pepper. Cook stirring occasionally until browned and tender, 5-6 minutes. Remove from pan and transfer zucchini to a plate. In the same pan heat another drizzle of oil over medium-high heat. Add the sausage to the pan and cook through, 3-4 minutes. Stir garlic and tomato paste into the pan with the sausage. Cook until the garlic is fragrant, tomato paste is well distributed and sausage is fully cooked, 1-2 minutes. Stir in cream cheese, chicken concentrate ½ cup of the reserved water, 1 tablespoon of butter, ½ teaspoon of sugar and a pinch of chili flakes to taste. Remove from heat. Add the rigatoni and zucchini in with the sauce. Stir in half the Parmesan. Season with salt and pepper to taste.
