Coconut Macadamia Nut Cookies Recipe

1 C butter, softened
3/4 C brown sugar, packed
1/2 C sugar
2 eggs
1 T vanilla
2 1/2 C flour, sifted
1 tsp soda
1/4 tsp baking powder
1/2 tsp salt
1 C shredded coconut
1 1/2 C Macadamia nuts, coarsely chopped
1 C white chocolate optional *

Directions:
Directions:
Preheat oven 375 degrees. Line cookie sheets with parchment paper. Sift dry ingredients and set aside. In mixing bowl, beat sugars and butter until light and fluffy. Add eggs and vanilla. Blend well and stir in flour mixture then add coconut, chips and nuts until blended. Do not over mix. Use a 2 T cookie scoop and drop onto parchment lined cookie sheets at least 2 inches apart.

Bake for 11-12 minutes until light and golden brown. Remove and let sit on cookie sheet for 1-2 minutes and transfer cookies to baking racks to cool. (Continue on next page)

NOTES:
-Toasted coconut and macadamia nuts make these cookies really special.
-*A white chocolate bar is good to use. Just chop up like you would nuts. I go to Aldi's and buy the "Choceur" white chocolate. It is the best!

These cookies are delicious if you like coconut and Macadamia nuts. This was my favorite cookie when I would go to the mall and I would head straight for Mrs Fields’s cookie counter.
