5 T light olive oil or melted butter
3/4 C sugar
1/2 tsp almond extract
1 tsp vanilla
2 tsp orange zest
2 eggs
2 C flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C pistachios, coarsely
1/2 cups dried cranberries, chopped

Preheat oven to 350 degrees.

Beat butter and sugar together in bowl of electric mixer until light and smooth; add eggs one at a time, then extracts. Stir in pistachios and cranberries and zest. Sift dry ingredients over egg mixture, then fold in until dough is just combined. Halve dough and turn each portion onto cookie sheet covered with parchment. Dough will be sticky. Using floured hands, quickly stretch each portion of dough into a rough 13-by-2-inch log, placing them about 4 inches apart on the cookie sheet. Pat each dough shape to smooth it. Brush with an egg white wash and sprinkle with sanding sugar.

Bake for 30-35 minutes, turning pan once, until loaves are golden and just beginning to crack on top. Remove from oven and cool the loaves for 30 minutes; Cover with a tea towel for a softer crust.

Lower oven temperature to 325 degrees. Cut each loaf diagonally into 1/2 to 3/4 inch slices with a SHARP serrated knife. Lay the slices about 1/2 inch apart on the cookie sheet, cut side up, and return them to the oven. Bake again, turning over each cookie halfway through baking, until crisp and golden brown on both sides, about 15 minutes. Transfer biscotti to wire rack and cool completely.

The tip of Biscotti can be dipped in melted white or dark chocolate after they cool.
