2 Pork Tenderloins (2½ -3 pounds each)
1 T. Rosemary, fresh, minced
1 T. Thyme, fresh, chopped
Kosher Salt and Black Pepper freshly ground
Good Olive Oil
10-12 Prosciutto slices

Directions:
Directions:
Preheat the oven to 450º. Place the tenderloins on a sheet pan and pat them dry with paper towels.
In a small bowl, combine the rosemary, thyme, salt and pepper. Sprinkle all sides of the tenderloins with the herb mixture. If there is a thinner “tail”, tuck it under so the tenderloin is an even thickness throughout. Wrap the tenderloins completely with a single layer of prosciutto. Tie in place with kitchen string to hold the prosciutto and “tail” in place. Roast for 20-25 minutes until a meat thermometer reads 140º for medium rare or 145º for medium. Cover tenderloins tightly with foil and allow to rest at room temperature for 15 minutes. Slice diagonally in thick slices to serve.
