8 C. thinly sliced sweet onions
2 Tbsp. butter
12 bacon strips cooked and drained
2 C. soft bread crumbs
3 to 4 medium tomatoes sliced thin
2 C. (8 oz.) shredded cheddar cheese
3 eggs
1/4 Tsp. salt
1/8 Tsp. pepper

Directions:
Preheat oven to 350 degrees.

In large skillet, saute onions in butter until tender. Cook bacon strips and crumble 9 bacon strips. Set the remaining aside. Place the bread crumbs in a greased 9 inch deep dish pie plate. Layer with half of the tomato, onion, bacon, and cheese. Top with the remaining tomatoes, onion, and crumble bacon. In a bowl, beat eggs, salt and pepper, pour over top. Sprinkle with remaining cheese. Top with reserved bacon strips. Bake 40 minutes. Let stand 10 minutes before cutting.
