Oatmeal Cranberry Cookies Recipe

1 C butter, softened
1/2 C sugar
1 C brown sugar
2 eggs
1 T vanilla
1 T molasses
1 3/4 C flour
1 tsp soda
1 tsp salt
1 T cornstarch
2 tsp cinnamon
2 C old fashioned oats
1 1/2 C dried cranberries
3/4 C chopped pecans

Directions:
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

Sift flour, soda, salt, cinnamon and cornstarch. Add oats. Set aside.

Cream sugars and butter together for 3 minutes. Add eggs and vanilla. Blend well. Stir in flour mixture, then add cranberries, etc. Blend well but do not over mix.

Drop by rounded (2) tablespoons onto parchment lined 11x15 cookie sheet, 2-3 inches apart. They spread! I put 12 scoops on cookie sheet)

Bake for 8-10 minutes until light and golden brown. Let sit on cookie sheet for a couple of minutes before moving to baking racks to cool.

To store cookies, put parchment/wax paper between layers of cookies so they will not stick together.

NOTES:
- Substitute raisins for cranberries.
- Coconut can be added.
