Oatmeal Cookies Recipe

1 C butter, softened
1/2 C sugar
1 C brown sugar
2 eggs
1 T vanilla
1 3/4 C flour
1 tsp soda
1/2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 1/4 C old fashioned oats
3/4 C dried cranberries
3/4 C chopped pecans

Directions:
Directions:
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

Sift flour, baking powder, soda, salt, cinnamon. Add oats. Set aside.

Cream sugars and butter together for 3 minutes. Add eggs and vanilla. Blend well. Stir in flour mixture, then add cranberries, etc. Blend well but do not over mix. Drop by rounded (2) tablespoons onto parchment lined 11x15 cookie sheet, 2-3 inches apart. They spread! I put 12 scoops on cookie sheet)

Bake for 12-15 minutes until light and golden brown. Take out of oven when they are still soft in the middle. Let sit on cookie sheet for a couple of minutes before moving to baking racks to cool.

To store cookies, put parchment/wax paper between layers of cookies so they will not stick together.

Chill the dough for about an hour and they will not spread as much.

- Substitute raisins for cranberries.
- Coconut can be added.
