1 Onion, small, finely diced
4 T. Butter
1 tsp. Salt
¼ tsp. Black Pepper
¼ - ½ tsp. White Pepper
6 Potatoes, medium, peeled and thinly sliced
2 c. Ham, fully cooked and cubed

Directions:

Preheat oven to 350º. Grease a ovenproof baking dish.
In a medium saucepan, melt 4 tablespoons of the butter over medium heat. Stir in onion and cook 2 minutes, stirring occasionally. Stir in the flour, salt and peppers until a roux forms. Slowly add in the milk, stirring constantly until boiling, about 10-15 minutes. The sauce will thicken. Place the potatoes and ham into the prepared baking dish and mix. Pour the sauce over the potatoes and top with the remaining 2 tablespoons of butter. Bake covered for 30 minutes. Uncover and bake 60-70 minutes longer. Let stand 5 minutes before serving. The sauce will thicken.
