2 6 oz. Pork Tenderloin
Olive Oil, drizzle
Salt and Pepper to taste
1 shallot, diced
5 tsp. Balsamic Vinegar
1 T. Cherry Preserves
1 T. Water
¼ - ½ tsp. Sugar
1 T. Butter

Preheat oven to 450º
In a medium skillet, drizzle olive oil and heat on medium-high. Season pork all over with salt and pepper. Add to the pan and cook, turning occasionally, until browned all over, 6-8 minutes. Save the pan, do not clean. Transfer pork to a baking sheet and let roast in the oven to desired doneness, 8-12 minutes.
Using the browning skillet, over medium heat, drizzle olive oil in the pan. Add shallots and cook, tossing until lightly browned, 4-5 minutes. Pour in vinegar and let simmer until reduced by half. Stir in Cherry preserves and water. Season with salt and pepper and up to ½ teaspoon of sugar. Remove from heat and add butter, stirring to melt. Spoon over each pork chop before serving.
