1 Cabbage Head, chopped
1 Onion, large, diced
1 Green Pepper, chopped
3 18oz. cans Chili Beans, Hot
3 18 oz. cans Red Kidney Beans, drained
1 16 oz. jar Salsa, thick and chunky, medium
4 cans Potatoes, whole or sliced (mix and match), drained
3 cans Tomatoes with Jalapeños, diced
3 lb. Ground Beef
1 lb. Ground Sausage
2 pkgs. Polish Kielbasa Sausage, sliced the way you like it
2 pkgs. Carroll Shelby’s Chili Seasoning

In a large pot, on high heat, boil the cabbage, onions and peppers. Let cook for 1.5 hours. Add 1 package of chili seasoning and let boil another 15-20 minutes.
While the vegetables boil, brown the ground beef and sausage together in a medium skillet. Add 1 packet of chili seasoning, mix well and continue to blend while the meat is cooking. DO NOT drain the meat.
Turn the heat down on the pot with cabbage mixture to medium-high, add the cans of beans and potatoes. Add the tomatoes and reduce the heat to low, continue cooking another 10 minutes. Add the beef and sausage to the pot along with the salsa. Cook 10 minutes longer. Add the kielbasa, continue cooking 10-15 minutes allowing everything to blend.
Turn off the heat and the chili is ready.

Carroll Shelby’s chili seasoning comes with masa flour, salt and cayenne, for making the chili thicker.
Makes a lot, but save it in the fridge, it’s better the next day.
