1¼ c. Macaroni, cooked, drained and set aside
½ c. Onions, chopped
½ c. Green Peppers, diced
½ c. Mushrooms, sliced
¼ tsp. Garlic, minced
1 T. Vegetable Oil
1 lb. Ham, small diced
8 + Velveeta Cheese, slices
1 lb. Tomatoes, diced
1½ tsp. Sugar
1¼ tsp. Salt
¼ tsp. Oregano

Directions:
Directions:
Heat the oil in a large skillet, sauté the onion, peppers, mushrooms and garlic until the vegetables are tender. Add the tomatoes and spices. Simmer 10 minutes. Add the ham and macaroni, mix well to blend everything together.
Preheat oven to 350º. Spread half the mixture evenly in a 9x13 baking dish. Lay in the Velveeta cheese slices. Top with remaining macaroni mixture. Cover with foil.
Bake 25 minutes then uncover and add a little more cheese on top. Bake 10 minutes longer until cheese melts.
