2 T. EVOO
8 Sunchokes, cleaned and cut in half


2 T. Butter
¼ tsp. Dried rosemary
1 Large garlic clove, grated


1 Cup White wine


6-8 Radishes, cut thin with mandolin or veggie peeler
2 Green onions, finely chopped
4 T. Flat leaf parsley, finely chopped
3 handfuls Spinach


Assemble

Over medium heat sautè sunchokes until carmelized.



Add to pan and sauté 2 mins.




Deglase the pan.


Prep





Spinach layered on the bottom of serving platter
Sprinkle sun chokes and radishes
Garnish with green onion and parsley
