Ingredients: 3 T EVOO 3 T Champagne/white vinegar 2 T Shallots, minced 1tsp Dijon S&P
4 oz Goat cheese log, sliced into 10 pcs (see below for cutting) 2 Eggs, beaten ˝ cup Panko ˝ cup finely chopped pecans

Salad greens - such as spinach, arugula, mixed greens. About 1/2 -3/4 box. 2 med. green or red pears, skin on, sliced and cored

Directions:Mix in small bowl and set aside.
Set up 2 dredging bowls - 1 for egg, 1 for panko & nuts, mixed Dredge cheese slices, 1st in egg, then panko Set up on cookie sheet w/wire rack - refrigerate 20-30 mins.
Over med. heat, sauté breaded cheese slices 1-2 mins per side til golden
Assemble Greens on bottom Pear slices fanned around in shape of serving bowl Goat Cheese slices scattered Spoon Vinaigrette over all Garnish with more finely chopped nuts |

Notes: Cutting a goat cheese log. Using unflavored dental floss cut a 6-8" piece. Place the floss under the log at the first spot you want to "cut". Grab both sides in both hands, bringing them together at the top and cross the floss between your 2 hands. Bring them together at the log, and using a sawing motion, drag down and through the log. Repeat for as many slices as you want.
