To prepare the seafood:

10 Scallops
10 Shrimp
3T. Olive Oil
2 T. Dried Parsley
Breadcrumbs



Lemon Butter Sauce
2 T. Butter
2 T. Garlic
2 T. Onion, chopped
¼ c. White Wine
¼ c. Lemon Juice
¼ tsp. Salt
½ c. Butter, cut into 8 pieces

Use 1 tablespoon of oil to rub the seafood. Add the parsley to the breadcrumbs, then roll the seafood in the breadcrumb mixture.
Heat remaining 2 tablespoons of oil in a medium frying pan. Fry the seafood 4-5 minutes. Remove with a slotted spoon and serve with the Lemon Butter Sauce.


Lemon Butter Sauce

Use 2 tablespoons of butter to sauté the onion and garlic, 3-5 minutes
Add White Wine, lemon juice and salt. Bring to a boil. Reduce heat, stirring occasionally until the liquid is reduced to ¼ of what you started with. Reduce to low heat and add butter pats one at a time, beating with a whisk. (Do not boil)
