1 1/2 stick Butter
(can substitute Guidry's trinity creole seasoning for these 4 ingredients)
3 green onions, chopped
3 pods of Garlic, chopped
1 small bell Pepper, chopped
1 small Onion, chopped
1/3 c. Flour
1/2 c. Water
1 small ctn half and half Cream
2 lbs. Crawfish tails (can substitute shrimp, crab, or mix)
1 lb. block mild Mexican Velveeta
12 oz. pkg flat egg Noodles
Parmesan cheese

Directions:
In a pot, melt butter. Sauté seasonings for 10 minutes. Add flour and blend well. Next, stir in water. Add crawfish and cook on low about 15 minutes. In a separate pot, boil noodles, drain, and set aside. Add cheese to the hot noodles and mix well. Then pour in half and half. Add crawfish mixture to noodle mixture. Pour into 2 buttered 9x13 pans. Bake at 350º F for 20 minutes. Top with parmesan cheese before or after baking.
