7 c water
2 tsp kosher salt
4 3/4 c masa harina

Directions:
Directions:
Coat 9x5” loaf pan with spray
Boil water and salt in a large saucepan over high heat. Slowly sprinkle in 4 c of masa, whisking constantly until smooth. Immediately pour into loaf pan. Cover with plastic wrap, Chill overnight.
Carefully remove loaf from pan and cut into 4x1/2x1/2” sticks and dredge in remaking 3/4 c of masa. Shake off remaining masa before frying.
Heat 3/4” oil in a large pan to 365º
Fry sticks in batches of 10-12, until golden, 6-7 minutes per batch. Transfer to paper towel lined plate and season with salt
