2lbs Fresh Boneless Cod Loins
¼ cup Butter
½ Small Onion, finely chopped
2 Garlic Cloves, pressed or minced
¼ cup Corn Starch (or Potato Starch if needed)
1 tablespoon Dijon Mustard
¼ cup Dry White Wine
2¼ cups Milk
⅔ cup Shredded Parmesan Cheese
1 Cup Shredded Cheddar Cheese
2 tsp Dried Summer Savoury
Salt & Pepper to taste
1 Small bag Plain Potato Chips, crumbled

Preheat oven to 350°F.
Cut cod into 1" pieces and arrange in baking pan or divide between 4-6 individual ramekins. Set aside.
In medium saucepan, melt butter over med heat. Add onion & garlic, cooking until onions are tender & translucent.
Stir in corn starch and cook for one minute, stirring continuously.
Add Dijon mustard, mixing well. Gradually whisk in white wine until smooth, then cook for 2 min, continuing to whisk.
Slowly add milk, whisking until smooth & heating until mixture starts to thicken.
Stir in half the Parmesan and a bit of cheddar until sauce is thick, melted & smooth.
Add dried summer savoury, salt & pepper to taste.
Pour sauce over the cod, ensuring it is evenly coated.
Sprinkle remaining cheddar & Parmesan over top, then cover with crumbled potato chips.
Bake uncovered for 25 min until fish is cooked through & sauce is bubbly.
