2 ounces (7-8 chilies / 1 1/2 cups) dried New Mexican chilies, stemmed, seeded, and torn into 1/2” pieces
1 teaspoon cumin seeds
1/2 teaspoon dried oregano, preferably Mexican
1 tablespoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper

  1. Working in batches, grind chilies, cumin, and oregano in a spice grinder until finely ground, about 30 seconds Stir in paprika, garlic powder and cayenne.
