5 oz coarsely ground roasted macadamia nuts, about 1 1/4 cups
1/2 cup panko
2 Tbsp flour
1/4 cup butter, melted
oil
4 mahi mahi fillets, 6 - 8 oz each
salt and pepper
2 Tbsp coconut milk

Directions:
Directions:
Combine the nuts, panko, flour, and butter.
Place the fish on a baking sheet covered by greased foil and season with salt and pepper on both sides.
Bake at 425º for 5 minutes, then brush with the coconut milk.
Divide the nut mixture over the tops of the fillets, patting to spread and adhere.
Bake 5 - 10 minutes more, until the crust is golden brown.
Let stand 10 minutes before serving.
