"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
BROWNIE LAYER
1 (4 oz) bar Baker’s unsweetened chocolate
1 1/2 sticks butter
2 C sugar
4 eggs, slightly beaten
1 tsp vanilla
1 C flour

WALNUT TOPPING
1/4 C butter
3/4 C firmly packed brown sugar
2 eggs, slightly beaten
2 T flour
1 1/2 tsp vanilla
4 C chopped English walnuts

Directions:
Directions:
Preheat oven to 350 degrees. Grease and flour a 13 x 9 inch pan.

Microwave chocolate and butter in bowl on HIGH for 2 minutes. Stir until completely melted. Stir in sugar and mix completely. Mix in eggs and vanilla until well blended. Stir in flour and spread into pan.

Walnut Topping: In same bowl, microwave butter and brown sugar on HIGH for 1 minute. Stir in eggs, flour and vanilla until completely mixed. Stir in chopped walnuts. Drop by teaspoonfuls about 2 inches apart. Take a knife spread evenly over brownie batter.

Bake for 45 minutes until toothpick comes out with fudgy crumbs. Do Not Over Bake. Cool in pan and cut into squares. Use a sharp knife or bench scraper and cut straight down. Don’t use a "sawing" motion!

Do not skimp on walnuts, it really takes 4 cups for them to turn out crunchy.
