Ingredients:  
1 medium onion, chopped
3 cloves garlic, chopped fine
3 T. virgin olive oil
1 28 oz. can crushed tomatoes
1 a5 ox. can tomato sauce
½ c. fresh basil, chopped or 1 t. dried
1 t. baking soda
salt and pepper to taste
8 chicken fillets or 8 veal cutlets

For Sauce:
Saute onion and garlic in olive oil
Add crushed tomatoes and paste
Add basic and baking soda
Salt and pepper

Simmer 15 minutes.

For chicken/veal:
Salt and pepper fillets/cutlets
Saute in 2 T. margarine and 2 T. olive oil until slightly browned.
Drain on paper towels.
Spray 9 x 12 rectangular baking dish with vegetable oil.
Cover bottom of dish with sauce
Add layer of chicken/veal
Place single slices of provolone cheese over chicken/veal.
Sprinkle with Parmesan cheese
Cover with 1 ½ c. sauce
Cover dish with foil. Bake at 350º for 30-45 min.
Uncover and cook 10-15 min. to reduce liquid.
Serve
