1 1/4 Cups Yellow Cornmeal
3/4 Cup All-Purpose Flour
1 Tablespoon Sugar
2 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 1/4 Cups Low-fat Buttermilk
1 Egg, Lightly Beaten
2 Tablespoons Butter Flavor Crisco

Directions:

ºHeat oven to 425 degrees F. Grease well 12 medium (about 2 1/2 inches) muffin cups. Place in oven to heat.
Combine cornmeal, flour, sugar, baking powder and salt in medium bowl.
Combine buttermilk, egg and Crisco shortening. Add to dry ingredients. Stir just until dry ingredients are moistened. Spoon batter into muffin cups, filling almost full.
Bake at 425ºF about 16 to 19 minutes.
