3 cups diced fresh pineapple
1 cup thinly sliced jalapeņo peppers
1 cup apple cider vinegar
2 cups granulated sugar
2 tablespoons lemon juice
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 tablespoon grated ginger
2 cloves finely chopped garlic

Directions:
Directions:
In a large saucepan, add apple cider vinegar, granulated sugar, lemon juice, mustard seeds, turmeric powder, grated ginger and chopped garlic. Bring to a boil, turn down the heat and simmer until sugar is melted.
Add diced pineapple and jalapeņo slices and simmer over medium heat until pineapple is soft and the liquid has turned to syrup; about 20 minutes.
Spoon into sterilized jars, wipe the rims and put on lids and rims, finger tight.
Water bath for 10 minutes for pints and 15 minutes for quarts.
