3 to 4 c. assorted vegetables, peeled and sliced, like potatoes, carrots, sweet peppers, zucchini
1/4 c. olive oil
1 T. lemon juice
3 cloves garlic, minced
salt and pepper to taste

Directions:
Directions:
Combine all ingredients in a large plastic zipping bag; toss to mix well. Spread vegetables on greased baking sheets. Bake at 425 degrees for 30 minutes; stir. Check for doneness. Bake for another 5 to 15 minutes, or until fork-tender.
