3 T. olive oil
1 large onion, diced
3 or 4 cans diced tomatoes (about 5 cups)
2-3 T. sugar (to cut acidity of tomatoes)
3 c. chicken broth
1 jar roasted red peppers, lightly rinsed
1 c. cream
1 c. pesto

Directions:
Directions:
Heat oil in dutch oven or large pot. Add onions, stir until browned. Add tomatoes, sugar, broth, and peppers. Stir and simmer for 20 minutes. Let it cool a bit. Add pesto, puree with a stick blender or in batches in a blender. Add cream and heat through. Add more sugar or salt as needed. Serve with a spoonful of cooked Orzo pasta, croutons, or crumbled bagel chips.
