1 lb sausage
4 cups water
1 cup uncooked grits
2 oz shredded sharp cheddar cheese
2 oz shredded pepper Jack cheese
2 oz shredded Monterey Jack cheese
3 eggs
1/2 cup milk
1/2 tsp celery salt
1/2 tsp ground mustard
1/2 tsp tarragon

Directions:
Directions:
Cook the sausage in a large skillet, breaking it up as it cooks.
Drain and remove from heat.
Boil the water, add the grits, and reduce heat.
Cook until grits are done.
Beat the eggs with the milk and seasonings, then add the grits, eggs, and cheeses to the skillet with the sausage.
Pour into a greased 9x13-inch baking dish and bake at 350º for 25 - 30 minutes.
