1-2 T. oil
1 or 2 sweet potatoes (depends on how many you have to feed)-peeled and cut into about 1/2 inch cubes
1 tsp. cumin
2 tsp. chili powder
1 can black beans rinsed

Directions:
Directions:
Preheat oven to 425º. Put oil on a cookie sheet, add potatoes and spices, stir to combine evenly. Roast approx. 25 minutes until browned and tender, stirring with a metal spatula (so you can scrape up the crispy parts) At 15 minutes, stir in black beans. Brush tortillas lightly with oil. Heat a tortilla in a skillet until warm. Put approx. 1/4 c. mixture on tortilla, fold when soft enough. Cook on each side till desired crispiness. Can also just lightly brown tortillas and then fill with mixture.

Serve with desired toppings. Our favorites are Cotija or feta cheese, green or white onions, and really good with warm Trader Joe's Red Pepper & Almond Pesto sauce (or any Romesco sauce).
