Ingredients: 1/4 c. butter, room temperature 1/4 c. sugar 1 egg 1 1/2 c. flour 2 1/2 tsp. baking powder 3/4 tsp salt (keep this amount the same if doubling) 3/4 c. buttermilk, plain yogurt or milk

Directions:Preheat oven to 350º. Grease 9" x 9" cake pan. Beat butter and sugar together until well combined. Add egg, mix well. In another bowl add flour, baking powder and salt, mix with a whisk. Add alternately with buttermilk to butter mixture, beat until just combined. Spread evenly in pan (easiest to just wet fingers and pat into pan).
Make topping: 1/3 c. brown sugar (packed) 1/4 c. flour 1/2 tsp. cinnamon 3 T. cold butter
Combine all ingredients with fork or pastry blender (or fingers) until crumbly. Sprinkle evenly over batter.
Bake for 25-30 minutes until toothpick comes out clean.
Glaze: 1 c. powdered sugar splash of vanilla 1-2 T. milk (or more as needed to make a thin glaze)
Whisk together, drizzle over warm cake. Serve warm with fresh fruit- our favorite is strawberries for April Conference and peaches for October. |

Notes: Some people might call this coffee cake, but it's our family tradition to have twice a year when we stay home from church and watch conference on TV. We double it to make a 9" x 13" pan if everyone is home, or if we just want seconds.
