1 pound pkg shelf-stable gnocchi
1 pkg smoked sausage, cut into 1 inch chunks or chicken thighs, cut into 1 inch pieces
2 cups fresh asparagus chunks
1 cup red onion wedges
3 T olive oil
1 tsp Italian seasoning
1 tsp kosher salt
1 tsp minced garlic

optional: 1-1/2 c cremini mushrooms

Directions:
Directions:
Preheat oven to 425º.

Combine ingredients in large bowl and toss to coat.

Spread on large, rimmed baking sheet.

Bake 20 minutes (or until chicken is cooked through), stirring after 10 minutes.

Optional: After 20 minutes add 2 cups of fresh spinach, toss gently and return to oven to briefly wilt.
