2 to 3 zucchinis, sliced evenly
2 large tomato, sliced evenly
2 c. chopped spinach
1 15 oz. container ricotta cheese
1 egg
2 c. shredded mozzarella
1/4 c. chopped parsley
salt
pepper

Directions:
Directions:
In a small bowl mix ricotta, egg, parsley, 1 c. mozzarella, and a pinch of salt. Set aside. In a small baking pan layer zucchini, spinach, tomato, and then ricotta. Repeat. Top with remainder of mozzarella. Bake at 350º about 15-20 minutes.
