½ cup Extra Virgin olive oil
¼ cup apple cider vinegar (or vinegar of choice)
1 tablespoon dijon mustard

1. Mix all ingredients in a jar and shake. You can add more oil or vinegar to your tastes.

This is my favorite vinaigrette that I made growing up for my family dinners. You can swap out any type of vinegars to change the flavor profile (red wine, balsamic, champagne, white wine vinegar). You can also add any combo of dried herbs to the dressing.
