2 medium zucchini
1 c panko bread crumbs
2 tsp. dried basil, divided
1½ tsp. seasoned salt
1 tsp. garlic powder
1 tsp. dried oregano
½ c. plus 2 T. grated parmesan cheese
2 large eggs, lightly beaten
cooking spray
Marinara sauce, warmed

Preheat air fryer to 375º. Cut each zucchini in half lengthwise and then in half crosswise. Cut each piece lengthwise into ¼ inch slices. In a shallow bowl, mix the bread crumbs,1 tsp. basil, remaining seasonings and ½ c. Parmesan. Place eggs and remaining 1 tsp. basil in a separate shallow bowl. Dip the zucchini slices in egg mixture and then in crumb mixture, patting to help the coating adhere.

In batches if needed, place the zucchini in a single layer on greased tray in air fryer basket; spritz with cooking spray. Cook until lightly browned, 6-8 minutes. Flip each piece; fry until golden brown, 3-5 minutes longer. Sprinkle hot fries with remaining 2 T Parmesan and serve with marinara sauce.

If you don’t have an air fryer these can be baked in a conventional oven using a convection setting for about the same amount of time.
