32 ounces frozen diced potatoes thawed in refrigerator
16 ounces smoked kielbasa sliced then halved
2 cups shredded Monterey Jack cheese or cheddar
10.5 ounce condensed cream of chicken soup 1 can
1 cup milk whole or 2%
1 tbsp dried chives
1/2 tsp ground black pepper
1/8 tsp cayenne pepper
chopped fresh parsley and red pepper flakes optional

Lightly grease a 6 to 8 quart slow cooker. Or use a slow cooker liner.
Add potatoes, sausage and cheese to the slow cooker insert.
In a small bowl, stir together the cream of chicken, milk, chives, black pepper and cayenne. Pour over the potato mixture. Stir to combine.
Cover and cook on Low 5 to 6 hours, or on High 3 to 4 hours. It's done when the potatoes are tender and heated thru. Stir before serving.
