Ingredients: 2/4 c. all purpose flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 3/4 tsp. cinnamon 3 large eggs 3/4 c. granulated sugar 3/4 c. cooked, mashed sweet potatoes 1 tsp. vanilla

Directions:Preheat oven to 375 degrees. Butter and flour a 15 x 10 inch jelly roll pan or spray thoroughly with cooking spray. Lay a cotton towel out on the counter and sprinkle generously with confectioners sugar. Sift together flour with spices, soda, baking powder and salt then set aside.
In mixing bowl, beat together sugar and eggs until thick and lemon colored. Add mashed sweet potatoes and vanilla. Stir in flour mixture and blend well. Spread batter evenly in prepared jelly roll pan. Bake for 11 to 14 min. or until cake springs back when lightly touched. Immediately loosen cake from sides of pan and dump on top of prepared towel with confections sugar. Roll up the cake in the towel starting at the narrow end and place on a cooling rack. |

Ingredients: 8 oz. cream cheese at room tempature 1 1/2 c. confectioners sugar, sifted 6 tbsp. butter 1 tsp. vanilla

Directions:In a mixing bowl, beat together cream cheese, butter, vanilla and add sugar, beat until smooth. Stir in toasted coconut if using. Chill for 10 to 15 minutes .
Unroll the cooled cake and spread it with the icing. Re-roll the cake (without the towel) and wrap it in plastic wrap. Refrigerate until thoroughly chilled, about 1 to 2 hours. To serve sprinkle with confectioners sugar. This freezes well. |
