6 T softened butter
1 c. white sugar
grate the rind of one lemon
two eggs, unbeaten
½ c. milk
1½ c. flour
2 tsp. baking powder
1 loaf pan

juice of one lemon and up to ½ c sugar, for glaze
Directions:
Directions:
Mix the first 7 ingredients above in order, preferably by hand, or use a mixer at low speed just to mix. Pour into prepared loaf pan and bake for one hour. Juice the lemon and mix with sugar, as desired. While the bread is hot, use a toothpick to make holes and pour over the lemon bread.

This recipe was given to me by an elderly lady when we lived in Toronto Canada. I was 19, so maybe she wasn’t so elderly. All my family love this lemon bread and it’s great with a cup of tea or coffee.
