2 (14 oz) artichoke hearts, drained and chopped
1 1/2 cups grated Parmesan cheese
3/4 to 1 cup of regular or light mayonnaise
1 1/2 to 2 tbsp fresh squeezed lemon juice, plus 1 tsp zest for garnish
2 garlic cloves, minced

Directions:
Directions:
Preheat oven to 350. Grease a 1 or 1 1/2 quart baking dish. Combine artichokes , only1 cup of cheese with remaining ingredients in a medium bowl. Then spoon into baking dish. Top with remaining cheese. (At this point you can cover and refrigerate for upto 1 day). Bake dip u til bubbly and lightly browned, about 30 minutes. Garnish with lemon zest if desired and serve.
